Back for her fifteenth diet cookbook, best-selling author, Judith Finlayson is bringing to the table one hundred and sixty-three mouth-watering recipes for slow cooker fans with her book “The 163 Best Paleo Slow Cooker Recipes.”  This time around, Judith Finlayson has compiled a collection of recipes ranging from appetizers to desserts and put them all into one book.   For anyone new to the Paleo diet, Finlayson will walk you through the basic premise behind the Paleo diet and explain what foods are restricted and why.

This book had lots of tips and useful information that I found very helpful and well worth reading.  All of the recipes are gluten-free and do not contain any processed ingredients or refined oils.  I liked how simple and easy the recipes were.  Since I believe that when using a slow cooker, all recipes should be simple and easy, I felt that this cookbook was spot on.  Plus there were plenty of pictures for those of us who are visually sensitive and require a little bit of extra help in knowing what the dish should look like upon completion. One thing I did notice was that there was no preparation times listed.   This is usually a huge factor for me when deciding whether or not I want to cook the dish.  I hope this is added in the future as this would be a tremendous help in meal planning. 

The cookbook included recommended substitutions and make-ahead suggestions, which was a really nice touch.  For those who want to try out some new recipes and are either new to the Paleo diet or want some new ideas for to include in their Paleo diet, “The 163 Best Paleo Slow Cooker Recipes” by Judith Finlayson seems to have a little bit for everyone.  A few of my favorite recipes were the Meatball Goulash, Baked Apples and the Down Home Chicken Gumbo.  Enjoy!
